Sante Spa Cuisine – NESCO

Founded by Sonal Barmecha, the Sante Spa, NESCO is designed to pull you straight into a state of calm. The transition is rather instant. The cascading green floral vines with a serene Buddha fountain at the entrance invite you in with a distinct spa-like ambience. It is rather easy on the eyes. The outdoor seating is shaded with traditional khas curtains that cool the air, and lush greenery complements the earthy cutlery and bamboo furniture. Look up, and you’ll find the ceiling layered like clouds with soft beige muslin with bamboo lanterns that perfectly diffuse the sunlight. At the heart of corporate suits, Sante Spa stands as a space embodying a distant cabana in Goa. The space also boasts two bars, a breezy bar outside offering refreshing tonics and detox water, and one as you enter inside, with giant macrame lamps, offering a larger variety, including wines.
The Zen principles of Buddhism run deeper. Upon entering, the seating becomes cosier and more elaborate with plush couches, minimal decor, and woven lacrame lanterns. Pull up your cushioned suede high chair and enjoy a glass of wine, or for those days requiring a post-meeting recharge, they have a private corner with bamboo swings and a plush pillow for a much-deserved alone time.
The Spa Cuisine
Sante Spa does what it does best, serving Spa cuisine. Yet, it differs from just being healthy. While our understanding of health can focus on cutting calories or counting macros, Spa cuisine is a holistic culinary philosophy. It focuses on complete rejuvenation with nourishing meals with gut-friendly ingredients that boost energy and are easy to digest. At Sante Spa, the food is vegetarian, vegan-friendly, and gluten-free. Curated by the brilliant Chef Shailendra Kekade, every dish utilises whole, organic ingredients, vibrant greens and microgreens.
From breakfast to dinner
If you are looking for a fresh morning kickstart, their vibrantly creamy smoothie bowls are the way to start. Order a full or half meal amongst our best picks of Pistachio and Matcha bowl rich in antioxidants, or go for a Chia Yoghurt Bowl topped with the best of seasonal fruits. Moreover, you can also top it off with extra isolated whey protein or plant-based protein. For a solo meal, we recommend ordering The Sante Thali featuring unpolished rice, black bean usali, fresh methi saute, cucumber and tomato koshambari, ragi and tofu kulcha, or a green pav bhaji. Nevertheless, if you are seeking something light, their farm-fresh salads, like The Burrate Orchard, do the trick.
Heading out with your colleagues to celebrate Friday, their shareable morsels are built for the table, such as roasted sweet potato tikki chat or homemade nachos with an endless plethora of hummus. But our favourite? Their guilt-free, crispy, whole wheat-based pizza. Yes, that’s right, pizza at a healthy restaurant! When the laptops finally close, the dinner menu awaits to welcome you into the warmly lit space, which is surprisingly cooler than outside. It is then that you can enjoy the full flavours of the menu, especially with Pistachio Parsley pesto on whole-wheat spaghetti, homemade Thai green curry, or even perfectly rolled vegetarian sushi.
